Heck yeah SOTN is amazing, it was my first Castlevania game and got me on the Netflix show and all the metroidvania Castlevanias (I'm pretty terrible at classicvanias though I respect them). I never played the Sonic Adventure games but I ended up with the Sonic Adventure 2 vocal album on my phone and it's unironically a banger. I actually don't hate the original Knuckles rap. Yes, ditto! I'm horrible at classic Metroidvanias till I played SotN and the Advance/DS games. I need save points lol. I always get stuck on Death anyway. I haven't given SA a replay in a long time but it's good to dig into if you wanna check'em out. SA2 is my fav. SEGA's sound team indeed pumps out some absolute bangers for many games, it's insane. For Knux, I like Unknown from M.E. And no prob! I hope to improve.
